Hi! I’m René, a wife, mom of 3, and home cook who loves to share simple family food. I love chocolate (mostly dark, never white), a good farmer’s market, an intense game of cards, and laughing. The last two usually go hand in hand.
Life is busy, and I believe that most family meals should be quick and simple but also fresh and delicious! My grandmother taught me how to cook, and I’ve always enjoyed sharing recipes and food tips. We Eat Simple is a place where I can share with you the knowledge that I’ve gained not only from my grandmother’s kitchen but from feeding my own family of 5 with food allergies.
When my daughter was diagnosed with food allergies, we were already a lower processed food family. However, in my panic of trying to figure out what to feed her, I constantly googled “gluten-free food.” Unfortunately, 95% of my search results were gluten-free alternatives like cakes, muffins, brownies, bread… you name it, you can find it!
I wasn’t looking for alternatives, and let’s face it, we were on a budget. Gluten-free labeled foods are expensive, and the ingredient list for homemade gluten-free baked goods can get complicated with unfamiliar ingredients. I just wanted ideas for gluten-free meals and snacks that I could make at home with ingredients I recognized.
So, instead of searching for gluten-free recipes, I started searching for recipes that were low-carb, whole food, real food, etc. I quickly realized that we already eat a ton of gluten-free food. It just wasn’t labeled that way because it’s naturally gluten-free. I continued weed through numerous websites, cookbooks, and food magazines for recipes to feed the whole family without having to cook separate meals. There wasn’t a single place to go for delicious food that was already gluten-free. The lightbulb came on, and I’ve finally created that place.
I share simple, delicious food your whole family can eat together without feeling like they’re eating gluten-free!
The recipes will come from those handed down to me, my kid-approved creations, and my obsession with reading every recipe that I see. I hope you enjoy exploring them all, and don’t hesitate to share one of your own!
